
When my family wakes up... they are going to realize what I have done, and they are going to hate me.
It's fall, and growing colder. Cold weather is upon us and some habits change with the seasons. A goal of mine, being who I am, is to keep my family warm and well fed.
To that end, again being who I am, in the colder months I often put a little something in the oven and set 'er on low for the night. About 250 or so.
This is not the energy efficiency nightmare one might think. It's a fairly new oven and well insulated, and it's also stuffed with all my cast irony pans and such. That's where I keeps them.
What did I do this time?.... Well........
I just slid a roast into one of my dutch ovens. This one is a largish pork loin. It's been marinating in some herbs and cracked pepper for a while too. Now, it's laid out in the Iron and I've done a few more things to it.
First, I sliced pockets into the roasts (one big roast sliced in two, so it will fit). Into those pockets I stuffed nice smelly chopped garlic.
Over the top I ground more coarse black pepper and kosher salt, applied pats of butter, and spooned on the final affront. Black cherry cognac sauce.
In the morning I will serve fork tender slices of this roast with over easy eggs and maybe potato cakes too.
My family will never be able to sleep in once that smells hits them.
BWAHAhahahahahahahaha!
