Minor food porn.....


Food porn of a down home
nature.

Tonight I was feeling peckish, and prodding the larder for
an idea. What falls before me ?!? Is that Jiffy Corn Muffin mix!?!

Instant Homer mode...... HMMMmmmmm COOOOORRrrrrrrrn Breeeeeead.

Two eggs, some evaporated milk, a few pats of butter, and twenty minutes later
I am munching hot
buttered corn bread.

Ambrosia!







Heres a recipe I want to try:

Jalapeno Corn Bread

(12-15 servings)

  • 1 pkg. "JIFFY" Corn Muffin Mix
  • 3 eggs, separated
  • 3/4 cup buttermilk
  • 1/2 cup sour cream
  • 4 jalapeno peppers-cored, seeded and diced
  • 1 small red pepper, diced
  • 4 Tbsp. margarine or butter, diced

Preheat oven to 400°, grease 10" cast iron skillet and preheat in oven. Combine egg yolks, buttermilk and sour cream; mix well. Add muffin mix and diced peppers; mix until moist. Whip egg whites to stiff peak and fold them and butter pieces into batter. Pour mixture into heated skillet. Bake 25-30 minutes.

mmmmm.. . Insert Homer saying "Pork Chop" here to go with it.

Also good with Jiffy. . reduce the liquid slightly and add a can of sweet CREAMED corn to the batter.

You know, there's a recipe on the Jiffy site you linked, using their pancake mix, to make deep fried cinnamon donut nuggets. . not that I'm suggesting anything. . . . . .
